Reluctant cooks catch a break with the release of The One & Done Cookbook

SAN FRANCISCO – October 24, 2022 – Stone Pier Press, a San Francisco-based environmental publishing company, announced the release of The One & Done Cookbook, which features 87+ plant-based recipes for easy weeknight cooking. Written and illustrated by Betsy Freeman, a product designer and passionate home chef, the book was inspired by conversations she had with friends who had neither the interest nor the time to cook.

Freeman set out to make cooking more seamless and fun by applying the same principles she uses to design products. She started with popular plant-based recipes and then adjusted, simplified, and tested each one. The result is a collection of recipes that are simple, healthy, and as flexible as you want them to be.

“I learned that cooking need not result in a mountain of dishes in the sink. That one recipe can be served many different ways. And that a single dish can amount to a full dinner, no sides necessary,” she says. “Mostly I learned that healthy cooking doesn’t have to be hard.”

In addition to easy-to-follow recipes, Freeman shares short-cuts, includes ingredient swaps to prevent last-minute runs to the store, and offers guidelines on how to cook without using a recipe. This is a cookbook that puts the focus on the fun stuff, says Freeman, “like eating.”

The One & Done Cookbook, illustrated by Freeman, is also beautiful. Choosing drawings, rather than photography, to illustrate the book is in keeping with the spirit of the book. “This is not aspirational cooking,” says Freeman. “It’s practical, flexible, and whatever you want it to be.”
