The lotus root is the primary aquatic economic crop in Baoying, distinguished for its ornamental lotus flowersand its underground stem — the lotus root — which holds high edibility and medicinal value.
At its peak, the lotus root cultivation area in Baoying reached around 250,000 mu, with the combined annual output value of planting, processing, and leisure tourism industries exceeding 4 billion yuan. Moreover, Baoying has successfully established the first national modern agricultural industrial park (for lotus roots) in Yangzhou.
As early as the Sui and Tang Dynasties, China had the tradition of planting and consuming lotus roots.The renowned Chinese pharmacologist Li Shizhen praised the lotus root in his work “Compendium of Materia Medica”: “It can be eaten all year round, bringing joy to the heart; it can truly be called a spiritual root.”
